Corn is by far the most important vegetable in Mexican cuisine. Not only is it added to many dishes, but it is the basis of many Mexican dishes - tacos, tortillas or quesadillas - which are made with corn flour. Traditionally in Mexico, corn is also eaten with a stick called an elote. The history of Mexican cuisine is closely linked not only to the history of Mexico itself, but also to the history of pre-Columbian civilizations: the Mayans and Aztecs. In addition to the stunning pyramids, the Mayans also had a major influence on Mexican cuisine. Thanks to the Maya of Mexico, the most important products of Mexico are widely known: corn, beans (even more than 20 different species), peppers, tomatoes, avocados, herbs and even... cacao, which the Maya first used . The influence of Catholic countries is also important in the history of Mexico, especially Spain - many Mexican dishes are based on Spanish patterns. Among other things, garlic, onions and dairy products came from Europe.<\/span><\/p>\n<h2><span style=\"font-weight: 400;\">What is a quesadilla?\u00a0<\/span><\/h2>\n<p><span style=\"font-weight: 400;\">Quesadilla is a common dish that can be found in any average Mexican restaurant. It is also a staple or snack prepared in home Mexican kitchens. While quesadillas are seen as an authentic dish from colonial Mexico, the recipe has been influenced by several other cultures and cuisines. For those unfamiliar with quesadillas, the dish is a humble corn or flour tortilla that is stuffed and then baked. A full quesadilla consists of two full tortillas with a filling between them - sort of like a sandwich - while a half tortilla is a single tortilla folded into a half-moon. Quesadillas are filled with cheese and other savory ingredients such as meat, spices and vegetables before baking.<\/span><\/p>\n<h2><span style=\"font-weight: 400;\">Where does the name quesadilla come from and how to pronounce it correctly?\u00a0<\/span><\/h2>\n<p><span style=\"font-weight: 400;\">A quesadilla is a tortilla filled with cheese and other toppings. Quesadilla con pollo, or quesadillas with chicken, is one of the most popular options. It's also a safe bet - for people with stomach problems and children - and can often be found on children's menus at Mexican restaurants. Quesadillas are usually served with small bowls of guacamole, pico de gallo (sauce made from chopped tomatoes, onions and cilantro) and sour cream. If you want to make it spicy, dip your quesadillas in green tomato and chili salsa!<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Quesadilla fritas come in a variety of pies that look and taste like large dumplings. They are fried like cheese, but I have to admit that we only saw them once - on our first day in Mexico City. From what I've read, quesadillas are very popular - you can find them in the Mexican capital, as well as in the states of Hidalgo, Mexico City and Morelos. If you only go to Yucat\u00e1n, you may never find one. In Veracruz, quesadillas fritas are called empanadas, which means the connection to large dumplings is quite true.<\/span><\/p>\n<h2><span style=\"font-weight: 400;\">What is a quesadilla most often confused with?\u00a0<\/span><\/h2>\n<p><span style=\"font-weight: 400;\">Similar dishes are tacos and burritos. These dishes combine tortillas and fillings with the same or very similar ingredients that are usually prepared in all three dishes. The name of this dish can be misleading, as Mexican cuisine also prepares a dish called quesada. However, quesada is a type of dish made with eggs, sugar, cheese and grated bread.<\/span><\/p>\n<h2><span style=\"font-weight: 400;\">How do you properly prepare a quesadilla?<\/span><\/h2>\n<p><span style=\"font-weight: 400;\">Quesadillas are prepared in the average way. Place the melted cheese on the tortilla, fold the tortilla in half and heat it in a comal, which is traditional Mexican cooking, much like a concave pan. It's baked at a very low temperature, so the tortillas won't overcook and the cheese melts nicely. Mexican Oaxaca cheese was originally used to make quesadillas. Today, however, any type of cheese is added. While traditional quesadillas are made with cheese alone, this recipe has been heavily modified with various additions, such as ground meat, chicken and vegetables. You can buy ready-made quesadillas or make your own, it is not difficult. Make a springy dough from flour and water. Set aside for fifteen minutes. Divide the dough into 10 equal pieces, form into balls and set aside for another fifteen minutes. Roll each piece into a pancake. Bake in a dry Teflon skillet over high heat. When the tortilla is mushy and browned, flip it over. To make a traditional cheese quesadilla, place each finished batter in a dry skillet over very low heat, place the cheese on top of the batter and cover with another batter. Fry on both sides. When the pancakes are crispy and the cheese has melted, place them on a large platter and cut into 6-8 servings.<\/span><\/p>\n<h2><span style=\"font-weight: 400;\">What can the quesadilla be served with?<\/span><\/h2>\n<p><span style=\"font-weight: 400;\">Quesadilla can be served as an appetizer or a main course. It's a type of fast food that you can get in many roadside bars and stalls.  It is served with salsa. This dish can be served with yogurt dressing, raita or guacamole. Probably in the version without sauce, just sprinkle with lime juice.
